Wendy’s Muffins

A friend of mine gave me this recipe, therefore they have always been called “Wendy’s muffins.”

Serving: Makes 18 muffins

Liquid ingredients:

• 2 eggs

• 1/4 cup molasses

• 1/4 cup oil

• 1 cup milk

• 1Tbsp. vinegar

• 1 cup applesauce

• 1 tsp. vanilla

• 1/2 cup brown sugar

Dry ingredients:

• 1 cup bran

• 1 1/2 cup flour

• 1/2 cup rye flour or wheat germ

• 2 cups oatmeal

• 2 tsp. baking soda

• 2 tsp. cinnamon

• 1/2 tsp. nutmeg

• 1/2 tsp. salt

• 1 ½ cups grated carrot

• 1 cup raisins

• ½ cup craisins

• ½ cup sliced almonds

Directions:

• Mix liquid and dry ingredients (everything except for the carrots, raisins, craisins, and almonds) separately, then combine.

• Add 1 1/2 cups grated carrots, 1 cup raisins, 1/2 cup craisins, and 1/2 cup sliced almonds.

• Bake in muffin tins at 400 degrees for 20 minutes.
