WSCR Recipe: Celebrate the Holidays with Homemade Eggnog

As the holiday season approaches, there’s nothing quite like a glass of rich, creamy eggnog to bring warmth and cheer. This classic drink is perfect for festive gatherings, cozy nights by the fire, or simply indulging in a little holiday spirit.

Ingredients

• 4 large eggs

• 1/3 cup granulated sugar

• 2 cups whole milk

• 1 cup heavy cream

• 1/2 teaspoon ground nutmeg

• 1 teaspoon vanilla extract

Instructions

• Start by whisking the eggs in a mixing bowl until they are light and frothy. Gradually add the sugar, continuing to whisk until well combined.

• In a saucepan over medium heat, combine the whole milk, heavy cream, and ground nutmeg. Heat the mixture until it’s just steaming—be careful not to let it boil, as this can alter the flavour and texture.

• Slowly pour the warm milk mixture into the egg mixture while whisking constantly.

• Return the combined mixture to the saucepan and cook over low heat, stirring constantly. You’ll want to heat it until it thickens slightly, about 5 to 7 minutes. The eggnog should be thick enough to coat the back of a spoon.

• Once thickened, remove the saucepan from the heat and stir in the vanilla extract. Allow the eggnog to cool to room temperature, then refrigerate until chilled.
