Queensland Diamond Cove Cook’s Corner – Slow Cooker Pepper Steak

4 to 8 hours slow cooker time.

The cornstarch thickens the liquid, but only slightly, to make more of a gravy, you can stir two tablespoons of cornstarch into a half cup of beef broth or water and stir it into the mixture while it’s still piping hot.

Ingredients

• Bell peppers, your preference of colour

• 1 large onion

• 4 cloves garlic

• 2 lbs beef round steak, sirloin steak

• 3 tablespoons soy sauce

• 1 tablespoon Worcestershire sauce

• 1 tablespoon brown sugar

• 1 teaspoon ground ginger

• ¼ teaspoon ground pepper

• ½ teaspoons salt

• 1 tablespoon cornstarch

• 1 tablespoon low salt beef broth powder or 3 low salt bouillon cubes crushed

• ½ cup water

Instructions

1. Deseed and slice bell peppers into strips.

2. Cut the onion into strips.

3. Peel and chop the garlic.

4. Slice the beef into thin ¾ to 1-inch strips and cut them to bite size pieces as needed.

5. Add vegetables and beef to slow cooker.

6. Whisk remaining ingredients together, and pour over beef, etc.

7. Stir all together, and cover with lid.

8. Cook for 4 hours on high, or 6 to 8 hours on low.

9. Serve over rice or pasta.
