Ingredients:
• 1 lb. ground beef
• ½ cup long grain white rice
• Salt and pepper to taste
• 1 (10.75 ounce) can cream of mushroom soup
• 1 (14.5 ounce) can diced tomatoes with juice
• ¾ cup shredded mozzarella cheese
Directions:
• In a large skillet, brown the ground beef over medium-high heat until fully cooked. Drain the excess grease.
• Combine ingredients: Stir in the cream of mushroom soup, diced tomatoes with their juice, and uncooked rice. Mix well to combine.
• Cook the rice: Cover the skillet and reduce the heat to low. Let the mixture simmer, stirring occasionally, until the rice is cooked and tender, about 15 minutes.
• Preheat the broiler: While the rice mixture is finishing, preheat your oven’s broiler.
• Transfer to casserole dish: Transfer the beef and rice mixture to a casserole dish. Evenly spread it out.
• Add cheese: Sprinkle the shredded mozzarella cheese on top of the casserole.
• Broil: Place the casserole under the broiler until the cheese is melted and lightly browned, creating a toasty topping.
• Season and serve: Remove from the oven and season with salt and pepper to taste. Serve warm.
