Skip the reservations and celebrate Valentine’s Day at home with a dinner that feels just as special. This creamy lemon shrimp pasta comes together quickly but delivers big, restaurant-quality flavour.
Ingredients (Serves 2 to 3)
• 8 oz fettuccine or linguine
• 1 lb shrimp, peeled and deveined
• Salt and black pepper, to taste
• 1 tbsp olive oil
• 2 tbsp butter
• 3 cloves garlic, minced
• ¾ cup heavy cream
• ½ cup grated Parmesan cheese
• Zest and juice of 1 lemon
• ¼ tsp red pepper flakes (optional)
• Fresh parsley, chopped (for garnish)
Instructions
1. Cook the pasta: Boil pasta in salted water according to package instructions. Reserve ½ cup pasta water, then drain.
2. Cook the shrimp: Season shrimp with salt and pepper. Heat olive oil in a skillet over medium heat. Cook shrimp 1 to 2 minutes per side until pink. Remove and set aside.
3. Make the sauce: In the same skillet, melt butter and sauté garlic for 30 seconds. Add cream and simmer for 2 to 3 minutes. Stir in Parmesan, lemon zest, lemon juice, and red pepper flakes.
4. Combine: Add pasta to the sauce, tossing to coat. Add pasta water if needed to loosen sauce. Return shrimp to the pan and cook 1 to 2 minutes.
5. Serve: Garnish with parsley and extra Parmesan. Serve immediately.
