Celebrate the flavours of the season with this rustic, flaky galette that pairs the natural sweetness of apples with sharp aged cheddar and earthy herbs. It’s an easy, crowd-pleasing dish that works beautifully as an appetizer, a cozy brunch option, or a light dinner alongside a fall salad. Fun fact: apple season in Alberta kicks off in mid-August and peaks through September—making this the perfect time to bake with local varieties.
Ingredients
For the crust (or use store-bought pie dough):
• 1 ¼ cups all-purpose flour
• ½ tsp salt
• ½ cup cold unsalted butter, cubed
• 3 to 4 tbsp ice water
For the filling:
• 2 to 3 apples, thinly sliced
• 1 tsp lemon juice
• 1 cup aged white cheddar, shredded
• 1 tsp fresh thyme (or ½ tsp dried)
• Salt and pepper to taste
• 1 tbsp olive oil or melted butter (for brushing)
Instructions
Make the crust (skip if using store-bought): In a bowl, mix flour and salt. Cut in the butter with a pastry cutter or fork until crumbly. Slowly add ice water until the dough just comes together. Shape into a disc, wrap in plastic, and chill for 30 minutes.
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
2. Toss apple slices with lemon juice, a pinch of salt, and thyme.
3. Roll out dough into a twelve-inch circle. Place on the baking sheet. Sprinkle the cheddar in the centre, leaving a two-inch border. Arrange apple slices in overlapping layers on top.
4. Fold the edges of the dough over the filling, pleating as needed. Leave the centre exposed.
5. Brush crust with olive oil or melted butter. Optionally sprinkle with black pepper or more thyme.
6. Bake for 35 to 40 minutes, until golden and bubbling.
7. Cool slightly before slicing. Serve warm or at room temperature.
