This pudding is a favourite with our family.
Ingredients:
- 1 cup flour
- 1 teaspoon of baking powder
- 2 tablespoons of cocoa
- 1/4 cup butter, at room temperature
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 1/2 cup whole milk
- 4 ounces of baker’s dark chocolate (70 % cocoa)
For chocolate glaze:
- 1 tablespoon cocoa powder
- 1/4 cup white sugar
- 1/4 cup water
Directions:
- Generously grease a steamed pudding mould.
- In small bowl, sift the flour, baking powder, and stir in cocoa powder.
- In large bowl, cream the butter and sugar for several minutes until light and fluffy.
- Add the eggs, vanilla and rum extracts and beat until thoroughly combined.
- Alternately stir in flour mixture and the milk, beginning and ending with the flour
- Melt chocolate bar chunks.
- Pour the melted chocolate into the batter and stir to combine.
- Spoon the batter into the prepared pudding mould and secure the lid.
- Place pudding mould into stock pot of boiling water so that the water reaches 1/2 the level of the mould.
- Cover pot and reduce to a medium boil for 1 1/2 hours. Keep adding boiled water to the pot throughout the process.
- Remove the pudding mould from the pot and let sit for 5 minutes while you prepare the glaze.
- To make glaze combine the three ingredients in small saucepan, bring to a boil, and simmer for 5 minutes.
- Invert the pudding onto a wire rack, while pudding is still warm, brush the chocolate glaze all over pudding and transfer to serving plate.
- Serve warm with whip cream, hot fudge sauce, or ice cream.
