Glendale’s Recipe Corner for May

This recipe was written out by my Great-Grandma Ida, who used to cook at logging camps in Northern Alberta with my grandpa. Give it a try and let me know what you think!

Oatmeal Crisp

Ingredients

• 1 cup sugar

• ½ cup butter

• 1 tsp vanilla

• ½ teaspoon baking soda

• 2 cups oatmeal

• Dash of salt

Instructions

1. Boil the sugar and butter together for three minutes.

2. Remove from the heat and add vanilla, baking soda, oatmeal, and salt. Stir to combine.

3. Bake in the oven until golden in colour.

While the original recipe doesn’t include a temperature for the oven, or specific bake time, I’ve tested out this recipe myself and found that 25 to 35 minutes at 350° produced a lovely result.
